I'm not well experienced with this specific wig but you're talking about the big braid in the back, right? You should be able to unbraid that one, as long as it's not sewn at the bottom or something like that. I think the 'don't undo' thing is mostly about wigs that have permanent hairstyles, like SM with her sewn-on odango, which would be pretty impossible to re-do. But if it's just the big braid in the back, yeah you should be able to undo and re-braid it. I would smooth some water wax over the sections to tame any flyaways and then re-braid.
